VEGAN TACOS + FRESH SALSA + QUAC
Mexican food has been one of our favourite meals for years and I’m so grateful I’ve come up with something deliciously flavourful that works for our vegan lifestyle at home. I must warn you, I cook like my mother, which means I don’t ever follow a recipe so I’m going to break it down as best as possible for you!
Eating vegan food doesn’t mean you have to sacrifice flavour and I’m so excited to share with you some of our most cooked meals. You probably see on snapchat (elenimcmullin) just how much I love to eat/cook so I’m excited to share some of these creations with you. One of my girlfriends (Abby from Twist Me Pretty) has been asking and asking for this recipe so it gave me more reason to get it up! Hope you love it, xx E
Here is the recipe to our delicious Mexican Tacos!
Ingredients:
“Meat” of the Tacos
12 Washed White Mushrooms
1/3 Pack of Low Sodium Taco Seasoning (You can make your own if you wish!)
1/3 of an onion
1 tsp of oil (coconut, olive, vegetable)
Instructions: Chop white mushrooms into thin slices. Turn frying pan on medium heat. Wait until it is warm and add the oil and onion. Add mushrooms and taco seasoning. Cook until mushrooms are dark and seasoning is well mixed.
Guacamole
1 Large Ripe Avocado
1/3 of a yellow onion
Juice from 1/2 of a fresh lemon
2 Cloves of pressed Garlic
1/2 tsp of Salt
1/2 tsp of Pepper
Instructions: Mash avocado into a bowl. Add chopped onion, garlic, lemon juice, salt and pepper and mix all together. At this point I will taste and see if it needs more lemon, salt or pepper! I also like to add some chopped tomatoes to it to make the serving bigger.
Fresh Salsa
1 Pack of Cherry Tomatoes
1/3 of a yellow onion
Handful of Fresh Cilantro
Juice from 1/2 of a lemon on lime (I usually use the other half of the lemon from the guac)
1 Jalapeño (I usually use 3/4-1 whole jalapeño with seeds, if you don’t like spicy remove the seeds)
Salt and Pepper to Taste
Instructions: Chop the tomatoes, onions, jalapeño and cilantro and add the to a little bowl. Add the juice from the lemon and salt and pepper. Mix everything. You can taste and see if it needs more spice, salt pepper or lemon!
Final Ingredients
Whole Grain Tortillas (You can eat it in a bowl or GF Corn Tortilla if you wish)
Refried or Black Beans
Rice mixed with Hot Sauce
Arugula or Lettuce
Warm up your tortilla on a clean dry frying pan. Add mushrooms, salsa, beans, rice, guac and lettuce. Wrap it up and enjoy!
