CAJUN VEGAN CAESAR SALAD

Ingredients
- 1-2 bunches of kale (depending on size)
- 2/3 of a cup of soaked cashews
- 1 tsp of balsamic vinegar
- 1-2 tsp of cajun spice (depending on your preference)
- 1/4 cup of olive oil
- 1/4 cup of warm water
- 2 large cloves of garlic (use more if small)
- juice from 2 lemons
- Sea salt and pepper to taste
Optional
- Handful of pita chips
- Coconut bacon
Instructions
- Wash and chop the kale
- Blend the remaining ingredients in a processor or magic bullet until creamy.
- Add more water as need to get a creamy texture.
- Pour the dressing over your kale and massage in with your hands to cover the leaves.
- Top with coconut bacon and pita chips if you wish.
