tofu scramble recipe

Tofu isn’t something we eat very often in our home.  I think because the texture kind of gets me, it just isn’t one of our favourites. I did notice when I went out I would order the tofu scramble so I decided to give making it a try–and have been in absolute love ever since.  With the tofu scramble only of course.. I still struggle eating tofu other ways.  This recipe is SO delicious and I promise even if you don’t like tofu, you’ll adore this easy protein packed breakfast.  

Vegan Tofu Scramble

  1. 1/2 yellow onion
  2. 2 cloves of garlic
  3. 4 fresh basil leaves
  4. 1/2 red pepper
  5. 1/2 yellow or orange pepper
  6. 1 handful of spinach
  7. 1 handful of kale
  8. 1 tbsp of oil
  9. 1/2 pack of extra firm tofu
  10. 1/2 avacado
  11. Salt and pepper to taste
  1. Warm pan on medium heat, add the oil onion and garlic. Cook until you can smell them sautéing.
  2. Add chopped veggies and basil and cook over medium heat for 2 minutes.
  3. Add in crumbled tofu, salt and pepper.
  4. Cook until golden.
  5. Serve with avocado, toast and some fresh orange juice!
  1. Serve with some hot sauce or add some Daiya cheese to the top! We do both!
