AMAZING TOFU SCRAMBLE

Tofu isn’t something we eat very often in our home. I think because the texture kind of gets me, it just isn’t one of our favourites. I did notice when I went out I would order the tofu scramble so I decided to give making it a try–and have been in absolute love ever since. With the tofu scramble only of course.. I still struggle eating tofu other ways. This recipe is SO delicious and I promise even if you don’t like tofu, you’ll adore this easy protein packed breakfast.

Vegan Tofu Scramble

Ingredients
- 1/2 yellow onion
- 2 cloves of garlic
- 4 fresh basil leaves
- 1/2 red pepper
- 1/2 yellow or orange pepper
- 1 handful of spinach
- 1 handful of kale
- 1 tbsp of oil
- 1/2 pack of extra firm tofu
- 1/2 avacado
- Salt and pepper to taste
Instructions
- Warm pan on medium heat, add the oil onion and garlic. Cook until you can smell them sautéing.
- Add chopped veggies and basil and cook over medium heat for 2 minutes.
- Add in crumbled tofu, salt and pepper.
- Cook until golden.
- Serve with avocado, toast and some fresh orange juice!
Notes
- Serve with some hot sauce or add some Daiya cheese to the top! We do both!
