MIGHTY CHIA PUDDING-OH SHE GLOWS
The truth about me is that I love to cook and bake very simple. Okay, I almost never bake but when I do I like it simple. Since I spend 90% of my day eating I need things that are easy to put together but still taste super delicious. When I first found out about Oh She Glows way back when I first became a vegetarian (now vegan) I fell in love. This woman not only displayed a lot of talent when it came to the food department but she was genuine, the kind of girl that didn’t look like she was trying too hard and I loved that about her. Her skills in the kitchen were something I wanted to simulate and I have been hooked ever since. She recently released her first cook book (about time there sweet girl) but I am loving it just as much as her blog.
This recipe is equally delicious as it is ample and that is what I love about it. I strongly recommend soaking the chia seeds in your dairy free milk over night, it allows them to poof up nicely and give that texture you desire. I add the sweetener and vanilla at the same time so all I have to do the next day is layer it up and serve! The ingredients for this recipe are in the above picture.
A lot of you may know I am extremely passionate about health and nutrition. When I first started studying to become a Registered Nurse I just wanted to learn more and more about our bodies and how important it is to nourish and care for them. Shortly after I became a vegetarian and then not too long after that I chose to live a vegan lifestyle (incase you didn’t already know).
