MEDITERRANEAN SALAD
I saw this salad inspiration over on Pinterest (where I generally get some of the basics for my meal ideas) and I wanted to make it immediately. It was so easy to create and I’ve made it a number of times already because it’s so delicious! If you’re not into kale you can always substitute for a lettuce of your choice. Always remove the middle stems of your kale to reduce that bitter taste. I hope you love it!

Ingredients
- 1/2 cup of sliced green olives
- 1/2 cup of pepperoncini pepper chopped
- 1 handful of sun dried tomatoes chopped
- 1 cup of chopped artichoke hearts
- 1 cup of diced tomatoes
- 1 cup of diced cucumber
- 1-2 bunches of kale depending on size
- 1/4 cup of chopped red onion
Dressing
- 1/2 cup of olive oil
- 2 tbsp of balsamic vinegar
- 1 tsp of red wine vinegar
- Juice of half of a lemon
- 2-3 cloves of garlic pressed
- Salt and pepper to taste
Instructions
- Wash and chop veggies
- Chop all items
- Add to bowl
- Add dressing
- Mix together
- Enjoy 🙂
Notes
- We add falafel or quinoa balls for some added protein and substance. SO delish!
