These cinnamon buns are super easy to create and you won’t even believe they are vegan! The recipe is from The Minimalist Baker but I kinda switched a couple things up. I know you’ll love them. Adore you all! xo E

"They're Vegan!"

Cinnamon Buns
- 3 cups of all purpose flour
- 1/4 cup of vegan margarine
- 1 pack of instant yeast
- 1 cup of non dairy milk (I used cashew)
- 1 cup of sugar
- 1/4 tsp of salt
- 3 tbsp of cinnamon
- Cream "Cheese" Icing
- 1 pack of Daiya original vegan cream cheese
- 2.5 cups of icing sugar
- 1 tsp of vanilla extract
- 3 tbsp of vegan margarine (I prefer Becel)
Instructions
- Preheat over to 350 degrees fahrenheit.
- Add 3 tbsp of margarine and the cup of non-dairy milk to a bowl then warm in a microwave until melted. Make sure the liquid is not too hot.
- Add the instant yeast to the top of the mixture and let sit for 8-10 minutes. Before adding the yeast, make sure the mixture is only lukewarm to prevent the yeast from deactivating.
- Add the 1/4 tsp of salt and 1 tbsp of sugar to the mixture.
- Slowly add in a cup of flour at a time making sure to mix thoroughly.
- Once all mixed together, remove from bowl and kneed really well on a counter top. Dough should begin to feel very soft. Roll into a ball.
- Slightly oil your palms and rub the circumference of the dough ball. Place in a bowl covered with a towel for an hour to rise. The dough should double in size.
- *Once doubled in size remove from bowl and roll out on dry counter top.Roll into an even rectangle.
- Spread the remainder of the butter onto the surface, sprinkle on the cinnamon and sugar once mixed together.
- Roll into a log
- Slice into approx 8-10 pieces
- Place in a slightly oiled baking pan and bake for 20-30 minutes. You will notice they are ready because they will look golden brown.
- Add Icing (see below notes for recipe) and serve warm. If you reheat the buns make sure to warm them up for 15 seconds in the microwave for extra an extra soft cinnamon bun.
Notes
- Cream "Cheese" Icing
- Add cream "cheese", butter, icing sugar, and vanilla to a food processor. Mix until smooth.
- *If you notice the dough it isn't rising, the yeast may have been deactivated. You can mix some in lukewarm water add kneed into the dough. Make sure it is kept in a warm spot.
