THE BEST GREEK LEMON POTATOES
Morning guys and welcome to day 12. I feel like this series has been going by so quickly, are you enjoying it? I’ve tried to balance sweets, treats, healthy dishes and comfort winter foods but I’m open to any suggestions you might have.
These Greek Lemon Potatoes are honestly such a traditional dish in my culture and so very easy to make. All the recipes that run in my family usually consist of no recipe at all–I’m serious, that’s how we all cook. I watched by grandma cook like that, my mom and I’ve carried on the habit of just winging it. These potatoes are one of those recipes you just don’t measure anything and they ALWAYS work out. Always. I hope you love them and bring them to some of your holiday get togethers this season. I’ve given rough measurements so feel free to just add them all to the pan but I’ve placed the rough measurements for those of you who prefer them. You’ll need olive oil, lots of lemon, garlic, oregano, salt and pepper–and some potatoes! Hope you love them–xx E


- 5-6 potatoes, peeled and sliced length wise
- 4-5 cloves of garlic, peeled and pressed
- 1/2-1 cup of olive oil
- Juice from one lemon
- 1 tbsp of oregano
- Pinch of salt and pepper
- Preheat the oven to 400 degrees
- Add everything into a baking dish and mix the potatoes really well together.
- Bake for 45 minutes or until the potatoes are golden looking.
