 I am obsessed with quinoa.  As a vegan i am always looking for the most efficient way to get my sources of protein and how better than this delicious seed? My favourite quinoa salad is easy and quick to prepare and you can make enough to last for a couple days, making eating healthy that much easier!

Time: 15 Minutes

To make things easier I begin boiling the quinoa right away so it cooks by the time I have all the veggies chopped.  The best way to make this taste perfect is to taste along the way and adjust vinegar and salt and pepper as needed.


1 Cup of Quinoa
1 Red Onion
1 Red Bell Pepper
1 Green Bell Pepper
1 Large Carrot (pealed)
1 Tablespoon of dried cranberries
5 Dried Apricots
2 Tbls Olive Oil
Balsamic Vinegar to Taste
Pinch of salt and pepper
