Good Morning Girls! I’m so happy my summer has slowed down so I can start creating more positive, useful content for you all! After paying a little bit of attention to your messages and screenshot photos on snapchat (elenimcmullin) I’ve noticed a huge portion of you are interested in recipes and meal ideas.

One of my favourite things to do is create healthy vegan meals so I decided it was time to finally share them with others. Eating healthy doesn’t have to be complicated and you can make it as fast and as easy as you would like!  I am one of the simplest cooks ever and I’m so thrilled to be sharing some of my favourites with you that I know you’ll have no trouble doing yourself!

We always like to start our day with a big healthy breakfast because we’ve noticed that it keeps us full longer and prevents us from unnecessarily snacking on junk or empty calories throughout the day.  Smoothie bowls are one of our favourite go to meals because they are so simple to create and are extremely filling! Smoothie (For 2 Bowls):

1 Cup Frozen Berries
1/3 Cup Frozen Mango 
1 Frozen Banana
1/2 of Non Dairy Milk (Coconut, Almond or Soy)

*You can add more liquid as needed but you want it to be thick enough to hold the toppings on top!


Add whatever things you love to the top!  It doesn’t matter just load up on your favourites!

Here we used:

Pumpkin Flax Granola 
Fresh Mango
Fresh Peach

1 tsp of Chia Seeds
1 tsp of Shredded Coconut
