CHOCOLATE PEANUT BUTTER GRANOLA BARS

Ingredients
- 2 cups of oats
- 4 tbsp of unsweetened vanilla almond milk
- 1 tsp of vanilla
- 1/2 cup of chunky natural peanut butter***
- 1 tbsp of cinnamon
- 2 tbsp of coconut oil
- 2 tbsp of milled flax seed or regular
- 2 tbsp of chia seeds
- 2 tbsp of hemp seeds
- 2 tbsp of maple syrup
- 1 pinch of salt
- 1 tiny handful of chocolate chips for inside the mix
- 1 cup of melted chocolate chips **
Instructions
- Mix everything in a mixing bowl except for the 1 cup of melted chocolate chips.
- Mix really well.
- Melt chocolate chips in the microwave for 2 minutes and then mix until soft.
- Spread a little bit of coconut oil on a deeper pan of your choice (depending how thick you want the bars).
- Add the mixed ingredients to a pan. Press to flatten together with your (clean) hand.
- Pour the melted chocolate over the top of the pressed mixture. Spoon in a little bit of peanut butter to give it the spiral look.
- Place in freezer for 15 minutes.
- Take out and slice into the size you prefer. I store mine in the freezer and grab as needed.
Notes
- **I can't seem to master stove top chocolate melting without burning it so I've resorted to always using the microwave 🙂
- ***If you don't have chunky peanut butter just start off with a little bit less and add until you get the preferred consistency. It could be too runny, if so, add more oats.
