CHIPOTLE BREAKFAST WRAP
These breakfast wraps are easily one of our favourite morning meals. They are a little more on the heavy side but we like that. We find the Chipotle Vegenaise at Sobeys but I found it here. I feel like 6 jars is a lot so if you could find it at your local store that is amazing. You could also just add chipotle spice to regular vegenaise which is at most grocery stores. I hope you guys love this one as much as we do!

CHIPOTLE BREAKFAST WRAP

Ingredients
- 2 whole wheat tortillas
- 2 tbsp of chipotle vegenaise
- 1 pack of extra firm tofu
- 1 red pepper
- 1 orange pepper
- 1 white potato
- 2 handfuls of spinach
- 1/2 yellow onion
- Pinch of fresh jalapeño
- 1 pack of pico or fresh salsa
- Pinch of pepper to taste
Instructions
- Wash and chop all veggies
- Saute onion in a pan on medium heat, then add all veggies.
- Cook until moisture is absorbed.
- Add tofu and cook until golden.
- Add chipotle sauce to a tortilla wrap, add your tofu mixture, wrap and cook on panini grill until crispy.
- Eat + enjoy.
