These breakfast wraps are easily one of our favourite morning meals.  They are a little more on the heavy side but we like that.  We find the Chipotle Vegenaise at Sobeys but I found it here. I feel like 6 jars is a lot so if you could find it at your local store that is amazing.  You could also just add chipotle spice to regular vegenaise which is at most grocery stores.  I hope you guys love this one as much as we do!

  1. 2 whole wheat tortillas
  2. 2 tbsp of chipotle vegenaise
  3. 1 pack of extra firm tofu
  4. 1 red pepper
  5. 1 orange pepper
  6. 1 white potato
  7. 2 handfuls of spinach
  8. 1/2 yellow onion
  9. Pinch of fresh jalapeño
  10. 1 pack of pico or fresh salsa
  11. Pinch of pepper to taste
  1. Wash and chop all veggies
  2. Saute onion in a pan on medium heat, then add all veggies.
  3. Cook until moisture is absorbed.
  4. Add tofu and cook until golden.
  5. Add chipotle sauce to a tortilla wrap, add your tofu mixture, wrap and cook on panini grill until crispy.
  6. Eat + enjoy.
