SOUTHWEST SALAD WITH CREAMY CILANTRO AVOCADO DRESSING + CORN SALSA
It seems like I’m really into salads but the truth is actually the opposite! I don’t love salads but when I find ones I do, I feel like I have to share. This one is so delicious and rich and creamy and I sure hope you love it! xo E

Salad
- 1 bunch of kale, stems removed and chopped
- 1 Avocado sliced
- 1/2 cup of cherry tomatoes
- 1/2 cucumber chopped
- 1/2 red pepper chopped
Corn Salsa (will make extra)
- 1 can of black beans
- 1 tsp of cumin
- 1 small can of corn
- 1/2 red onion chopped
- 1 handful of cilantro chopped
- Splash of olive oil
- Splash of balsamic vinegar
- Salt and pepper to taste
Avocado Cilantro Dressing
- 1/2 cup of soaked cashews
- 1 juiced lime
- 1/2 Avocado
- 1 clove of garlic
- 1/4 cup of unsweetened plain almond milk (or any plain non diary milk)
- 1 tsp of balsamic vinegar
- 1/2 cup of olive oil
- Salt and pepper to taste
Instructions
- Wash and chop all veggies under salad and split between two bowls.
- Add all corn salsa ingredients to a separate bowl and mix. Add salt and pepper as per desired.
- Throw all the creamy cilantro avocado dressing ingredients to a food processor or magic bullet and blend until creamy.
- Add corn salsa and dressing to salad ingredients, mix and enjoy
