  1. 1 box of whole grain pasta
  2. 1/4 cup of olive oil
  3. 1 can of tomato sauce
  4. 1 small can of tomato paste
  5. 3-4 cloves of garlic
  6. 1 yellow onion
  7. 1 pack of basil
  8. 1/4 of a jalapeño
  9. 1 pack of white mushrooms
  10. 1 bell pepper
  11. Handful of spinach
  12. Couple of sticks of asparagus
  13. Handful of cherry tomatoes
  14. Salt and pepper to taste
  1. In a pot on medium heat, add the tomato sauce and tomato pate. Boil for 15 minutes***
  2. In a separate pot, cook the pasta noodles as recommend on the box.
  3. Wash and chop all veggies (including jalapeño).
  4. Chop and press the garlic and onion into their own bowl.
  5. In a medium sized frying pan on medium heat, add a tsp of olive oil and let warm. Add the garlic and onion until translucent.
  6. Then add veggies and cook until all the water is absorbed.
  7. Add the tomato sauce and paste to the veggies with the olive oil.
  8. Reduce heat to low.
  9. Add in chopped basil.
  10. Add salt and pepper to taste.
  11. Once simmering, pour over cook noodles and enjoy 🙂
  1. ***Boiling the tomato mixture will help reduce that bitter taste. If you don't have the extra time you can always add a bit of sugar to cut the bitter taste.
