APPLE CIDER BAKED DOUGHNUTS
Hello day 7 of 30 days of our #plantbasedrecipes, we hope you guys are enjoying this series. I initially had pinned this recipe from My Darling Vegan for decor inspiration for Harlow’s first birthday and then quickly realized they were vegan. Since I can’t bake I was so nervous to try this out for her party but they worked SO well. It has always been a dream of mine to bake my daughter’s birthday cakes and deserts the way my mom did for me so it actually was very exciting when they did work out so nicely. I highly recommend it and modified a couple spots to be a little more to my liking but otherwise it’s almost exactly how she created it. I’m happy I found and her and look forward to creating some more vegan dishes of hers. Hope you love them.

- Doughnuts
- 1 cup all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/8 tsp nutmeg
- 1/8 tsp allspice
- 1/2 tsp salt
- 1/3 cup maple syrup
- 1/4 cup apple cider
- 1/4 cup apple sauce
- 1 tbsp canola oil
- 1 tsp vanilla extract
- Apple Cider Glaze ( I modified this part)
- 1.5 cups of powdered sugar
- 2 tbsp apple cider
- Cinnamon Sugar Topping
- 1/2 cup granulated sugar
- 1 tbsp cinnamon
- Instructions straight from My Darling Vegan
- Preheat the oven to 350 degrees Fahrenheit. Generously grease a doughnut pan and set aside.
- In a small bowl combine flour, baking powder, baking soda, spices, and salt. In a separate bowl whisk together maple syrup, apple cider, apple sauce, canola oil, and vanilla extract. Add wet ingredients to dry and mix until just combined.
- Spoon or pipe batter into the prepared doughnut pan, filling each mold about 3/4 full.
- Bake for 8-10 minutes, until doughnuts springs back when gently pressed. Remove from oven and let cool in pan for a few minutes before transferring doughnuts onto a cooling rack to cool completely.
- To make glaze, whisk together powdered sugar and apple cider in a small shallow bowl. In a separate bowl, combine ingredients for cinnamon sugar topping.
- Once doughnuts have cooled, dip the tops of each doughnut into the glaze. Immediately sprinkle with cinnamon sugar.
- Let glaze harden and enjoy!
- I made a number of batches of these and I found the above version worked best when it came to icing and flavour.
