It is no surprise ​Pigeonhole​ was named one of Canada’s Best New Restaurants as
determined by Air Canada enRoute Magazine and I was thrilled to be invited by
American Express Canada for an exclusive dinner to try it out for myself. ​It was
especially exciting because it was the first time ever that ​Amex opened its doors to all
Canadians, allowing them the chance to experience the benefits of being a

Needless to say the winners were definitely in for a treat because the moment I
stepped foot inside I knew it was a place I would be frequenting often. Pigeonhole is
one of Calgary’s newest [not to mention trendiest] restaurants and they are already
taking the title of Canada’s Best New Restaurant. This city is booming with local
talent and Pigeonhole is living proof. Every detail from the wallpaper to the plate
settings to the food on our table was impeccable and I’m impatiently awaiting our
next visit.

I can generally predict what my experience is going to be like the moment I mention
my vegan lifestyle and this night exceeded my expectations. The staff wasn’t only
willing to accommodate my needs—they were overjoyed. We were able to sit at the

Chef’s Table so we had close eyes on the pieces of art they were creating. It truly
was art and their passion for crafting such masterpieces was evident. I appreciated
their enthusiasm to make my night equally as memorable.

The sharing style menu allows for guests to try multiple dishes and lucky for me, I
was the only vegan. If you followed our night on Snapchat, you probably saw one of
my favorites; crushed edamame on a toasted baguette topped with beets and spiced
to perfection. Dream. Come. True. About that miso cauliflower–even the
non-vegan’s were stealing nibbles from my plate.

Tim couldn’t stop raving about the food on his end. We are experienced at eating
out (honestly) and this has taken place as our new favorite. I encourage you to visit
